Firstly, the demographic of your customers, the question is who are your customers? The major items in demographic will be age, income and ethnicity.

Here are some points to consider:

Which are the major age groups in the locality?
Young professional working adults?
Young family with small children?
Mature neighborhood with retirement age residents?

Different age group will enjoy different dining experiences. For example young professional working adults will prefer a much more hip and trendy restaurant. Young family with children will prefer a children friendly family restaurant. Mature residents may be more concern with healthy yet delicious food for their taste bud.

Secondly, the income level of your customers, the question is how much are your customers willing to spend on a meal? Lower income group will probably spend only the necessity on food. Middle income group may prefer quality food within an affordable price range. Higher group will expect exceptional dining experience with high quality food and full service. These factors will determine the type and quality of food you serve, the deco of your restaurant and the level of service to provide in your restaurant. Different restaurant concept will determine the spending level.

Lastly, the locality of your restaurants and its surrounding neighborhood the question is who are the target customers within the locality? Different locality will attract different type of customers. If you are located right in the middle of the city, you expected your customers to be working adults and weekdays are your busiest days. If you are located in the residential areas, your customers are likely to be families and your busiest days will be the weekends. If you are located in tourist spots, then your customers range will be much wider and your busiest time is the holidays.

With this information on hand, you are able to make an informed decision of which restaurant concept is right for you and the type of food to be served. Restaurant concepts can broadly be categorized as:

Quick Service Restaurant (QSR)
Family dining restaurant
Casual dining restaurant
Fine dining restaurant
Theme restaurant
